  • 1 small red onion, sliced thin
  • 2 cloves garlic, peeled and sliced thin
  • 2 tablespoons white wine vinegar
  • 2 tablespoons olive oil
  • 1 1/2 teaspoon ground cumin
  • 1 teaspoon coarse salt
  • 1/4 teasppon freshly ground black pepper
  • 1 pound bone in, skin on chicken breast (1 split chicken breast)
  • Fresh cilantro leaves for garnish
