  • 4 portobello mushrooms, thinly sliced

  • 3 tablespoons aged Balsamic vinegar, eyeball the amount
  • 1/2 cup mayonnaise or reduced fat mayonnaise

  • 2 vine ripe tomatoes, sliced
  • 2 scallions, chopped
